Preparation:Pound the spice mixture in a mortar until ground slice the chicken in to slices mix 1 1/2 cups warm water with the greated coconut and squeeze out 2 1/2 cups of coconut milk remove the stems from the ma kheua phuang skim 1 cup of coconut cream from the coconut milk and heat this cream until oil surfaces. add the spice mixture and stir until done. add the chicken and continue stirring Transfer to a pot add the remaining coconut meat and bring to a boil add the Ma-Kheua Phuang and season to taste with the palm sugar and light soy sauce. Add sweet basil and kaffir lime leaves and remove from heat. |
