Phat Kaprhao Kai recipe

 

khao Pad Khai (chicken fried rice)

(Chicken in a creamy hot basil - chilli sauce)

 

Ingredients:

200 grams Chicken

100 grams ricestraw mushrooms

5 red chillies

10 cloves garlic

1 tbsp salt

1/2 cup holy basil leaves

1/4 cup oil

1 tbsp light soy sauce

1 tbsp sugar

3 tbsp water

Preparation:

Clean the chicken and cut into bite sized pieces

Wash the mushrooms and cut into halves

Pound the chillies, garlic and salt in a mortar until ground

Heat oil over medium heat and when hot stir fry the chilli - garlic mixture until fragrant.

Add the chicken and mushrooms and stir fry while adding the water.

Stir until the meat is tender.

Add basil leaves and season with soy sauce and sugar.

Serve hot with rice.
